Hi everyone, my name is François Nadeau. Fromagerie Kapuskoise has been my ambition ever since 2011. I was travelling in Asia – cheese was extremely rare and I decided to learn how to make it so I would never have to do without.This has been my passion for the last few years and brought me to Saint-Hyacinthe, Québec in 2013 for basic training followed by in-depth training in France from September 2013 to June 2014.Since my return, it has been my full time job to get started:find a site, get loans, purchase and obtain permits from Government agencies and Ministries, and of course renovation/construction.Since 2011, we have made a lot of progress and we are now open.I have been getting a lot of community support , words of encouragement, and questions: I am profoundly thankful to all. Fromagerie Kapuskoise makes artisan cheese, meaning a greater attention to all steps of cheese making, from reception of milk to packaging so as to ensure a higher quality of cheese. I love cheese, I love Kapuskasing and the area and I am happy to be here long term!
